This wine can be paired with white meats in sauce, and is a marvellous companion to salmon baked in foil.

climate

The winegrowing regions of Chablis enjoys a more semi-continental climate that is wetter, and often susceptible to springtime frosts.

soil

well drained clay-limestone soils, also called Kimmeridgean, that dates from the Jurassic period. The particularity of Montmains is its typicity that is so evident from its terroir, a very stoney terroir that gives the wine very pronounced mineral aromas, with a full and very ample mouth.

vinification

Mechanical harvest. When the grapes arrive at the winery they are sorted. Vinification happens according to geographic situation, only in stainless steel tanks. Ageing happens over a relatively long period (one to two years), to allow the wine to take the time to ripen without rushing nature.
