100% Lime-rich, well-drained substrate
Maceration: Cold pre-fermentation, maceration at 8°C for 8 days, in stainless steel tanks. Fermentation: at 26-28ºC. After fermentation, the juice remains in contact with the skin for 8 to 10 days.
