Beautiful, light rosé color. Seductive aromas of raspberries, rose petals and a hint of rosehip. A fine spicy touch comes up in the mouth and gives a little more structure and complexity. Remarkable balance between the delicate fruit and its elegant structure. Its partly and refined wood-aged character transcends the ordinary terrace rosé and also offers many possibilities in the kitchen.

This culinary style and surprising combination of Grenache gris and Viognier can be tasted with smoked salmon, fish papillot, fish stews and vegetarian dishes with a spicy character.

climate

The Cévennes have a Mediterranean climate (warm, dry summers and mild winters) that is strongly influenced in the intermediate seasons by cooling winds from the north and by rains and coolness coming from the Pyrenees. There can sometimes be a lot of precipitation in a short time. These temperature fluctuations (also during the night) guarantee a longer and better ripening of the grapes.

The massif of the Cevennes is one of the last foothills of the Massif Central and is mainly dominated by calcareous soils with clay and boulders.

vinification

Grenache gris and Viognier are picked and pressed separately, after which the Viognier gets a classic fermentation like white wine and Grenache gris gets a fairly long cold maceration on the skins in stainless steel barrels. The wines are then assembled and the wine rests further in stainless steel, with a small part maturing in oak barrels. Afterwards, the wines are put back together and bottled.
